When it comes to countries known for their dumpling craft, a handful might immediately jump to mind: Poland and its myriad variations on the pierogi, China and its dim sum, Italy and its many stuffed pastas. The United States is not necessarily high up on that list—but there’s more there than you might think. Look a bit closer across its many states and cities, and you’ll find a patchwork of regional stuffed-dough subcultures.
